20 minute Creamy Mac and Cheese

This is a family favorite. The kids love it because it is creamy and delicious. I love it because it is super easy to make and leaves an easy clean up! It takes 5 minutes to prep, 10 minutes for the pressure cooker to heat up and then 10 minutes until it is done.

I make it in my electric pressure cooker. You can find out more about this in my post:Pressure Cookers: The best thing since crock pots!

2 cups water

4 cups half and half

1 tablespoon butter

1 (16 oz) bag of shredded cheese   *any kind, my kids like Colby jack, but I like sharp cheddar.

1 cup grated Parmesan cheese

1 pound box of elbow macaroni or small shell pasta

Inside the inner pot of the pressure cooker melt the butter by hitting the rice/ risotto button, with the lid off, allow butter to melt.

Add water and pasta. Stir and heat for another 2 minutes.

Hit the cancel button. Next add half and half, shredded cheese, Parmesan cheese. mix thoroughly. Tighten the lid and make sure the pressure valve is in the locked position.

Hit the rice/risotto button. Then the time adjust button 4 times until it reads 10 minutes.

The timer screen will blink for 10 minutes until it gets up to the correct temperature and pressure. Then it will count down the 10 minutes of cooking. It will beep when done.

The pressure cooker will automatically keep the contents warm until you are ready to serve.

To open the pressure valve, wear an oven mitt. turn the valve to the open position. CAUTION: Steam comes out very fast and very hot. be careful not to get burned.

Release pressure valve first, then unlock the lid. Mix and serve!

  • Add ham along with the cheese before sealing the cooker.
  • Brown some sausage or hamburger in the pot with the butter then add the pasta
  • add veggies like , spinach or broccoli
  • after cooking place in a baking pan, cover with bread crumbs and place under broiler until browned.
