Happy National Egg Day!
I love sunny side up eggs, but I am pretty picky about how the eggs are cooked. I do not like the whites to still be gooey. Which is hard to do without flipping the egg in the pan. I also like the yolks a nice gel consistency, not raw and not too over cooked. Honestly, I am so picky I stopped trying to cook sunny side up eggs and just stuck to scrambled for the longest time because they were easier to make.
That was until I watched the show America’s Test Kitchen a few months ago on netflix and learned the easiest way to cook a perfect sunny side up egg every time. Now I make them just about every morning. So you want to know the secret? Of course you do. Here is the trick.
Place your frying pan on a medium to high heat for a few minutes to heat up the pan evenly. Add 1/2 tablespoon of olive oil and turn down to medium heat. When the oil start to shimmer, crack your eggs into the pan. Cover with a lid right away and leave on the burner for 1 minute. Then remove the pan from the heat and keep the lid on for another 2- 3 minutes. Time will depend on how well done you want your yolk. Runny yolk will only take about 1.5 minutes off the burner, the longer you wait the more the yolk will congeal. I like mine after about 2 minutes off the heat.
The whites are cooked all the way through and are nice and fluffy, the yolk is done to the perfect consistency you like.

Now if my chickens would start laying some fresh eggs, I would be in heaven!
