I recently posted a recipe for Left Over Pork Stew. It got me thinking about the amount of food that is wasted here in America everyday. Here is a great article that I found that talks about creative ways to use up food rather than throw it away.

  1. If I’ve cooked too many vegetables for Sunday dinner, I save them for “bubble and squeak” on Monday – just mash everything together, form into potato cakes and fry. Also, save chicken carcasses for stock – you can freeze them if you haven’t got time to make it straight away.
