Nothing goes to waste in our house. Between taking leftovers for lunch, all our animals and then finding creative ways to use up what we have. Last night I made this pulled pork sandwich recipe: . We ended up having a ton of yummy broth left over. So I decided to make a pork stew with it for dinner tonight. I took the left over broth , some of the leftover pork and added a few things we had around the house, fresh veggies from the garden and a couple of cans of beans.
Left over pork from pulled pork ( I had about 2 cups left over)
Left over broth from pulled pork
2 cups chopped kale
1 yellow pepper
3-4 cloves garlic
1 can white beans
1 can chick pea
I put it all back in the pressure cooker (Pressure Cookers: The best thing since crock pots!)
Put it on the soup setting for 10 minutes and it was amazing. The vegetables were done perfectly and the flavors tasted like it had been simmering all day.
