Creamy Parmesean and Sausage Rissotto

This is cooked in an electric pressure cooker:Pressure Cookers: The best thing since crock pots!

2 cups aborio rice

32 oz. of chicken broth

2 cups water

1 small chopped vidalia onion

2 cloves of garlic

1 pound Italian sausage

1/2 tablespoon olive oil

2-3 cups fresh chopped spinach

3/4 cup grated Parmesan cheeses

1/2 teaspoon rosemary

1/2 teaspoon thyme

1/2 teaspoon oregano

Turn on your pressure cooker to the rice setting and brown the sausage in the pot.

Add all the other ingredients except the cheese. Place the lid on the pressure cooker, seal the valve and hit cancel. Then hit the rice button again and adjust the time to 10 minutes.

When the cooker beeps. release the steam and open the lid. Add the cheese and stir well before serving.
