Summer time and picnics equals lots of potatoes salad making. My husband absolutely despises mayonnaise, so traditional picnic salads are out for us. But he does love my Oma’s German potato salad. We have had several picnics over the past few weeks and I have found myself making it a lot. It’s kinda involved with the bacon and onion to saute and the potatoes to boil and the dressing to simmer. I needed to come up with a quicker way to make it and with less pots and pans to wash after. I saw my pressure cooker sitting on the counter and this idea was born:
You will need:
Electric pressure cooker Pressure Cookers: The best thing since crock pots!
2 pounds of red potatoes
1 large yellow onion
3 cloves garlic
1/2 pound of bacon
2 cups apple cider vinegar
1/3 cup white sugar
2 tablespoons coarse ground mustard
Chop the onion , garlic and bacon in small pieces. Turn the cooker onto the rice setting and saute the bacon, onion and garlic until the bacon is cooked and the onions are caramelized. Chop up the potatoes into 1 inch to 1/1/2 inch chunks and place inside the cooker with the onions and bacon. add one cup water and one cup of the apple cider vinegar. Seal the lid and the pressure valve. Put on the soup/stew setting for 10 minutes. When it’s done. release the pressure valve and open the lid.drain off some of the remaining water , add the remaining cup of vinegar, the mustard and the sugar. Mix thoroughly. This potato salad can be served warm or you can chill it in the refrigerator for a few hours to serve it cold.
Easy preparation, easy clean up. Picnics just became fun again!
