You will need:
1 cup chickpeas
2-3 cups chopped fresh spinach or kale
1 cup crab meat or imitation crab meat
1 tablespoon of your favorite vinaigrette dressing.
This makes two servings.
In a fry pan over medium to high heat, coat bottom of pan with olive oil. Saute chick peas for 2 min. Add chopped spinach and stir until wilted. Add the crab and stir until heated through. Pour into a bowl and add salt pepper and dressing to taste.
Simple. Quick. Fresh. Delicious.
Lunch tip: I put all the ingredients in a microwavable container and bring it to work. Then toss it in the microwave for 2 min. To heat and wilt the spinach. Quick healthy lunch.
