This is another great healthy and delicious way to start your day and get an extra serving of veggies in. You can dice the cut up the zucchini the night before and store in the frig to save time in the morning.
1 small zuccini
2 fresh eggs
2 tables spoons plain greek yogurt
2-3 teaspoons of dill
Dice or Julianne the zucchini into small pieces. sate with a little olive oil until they start turn translucent. Push them to the outside of the pan and crack the two eggs into the middle of the pan. cover two to three minutes and them remove from the heat and let sit covered for another 5 minutes. Meanwhile mix the two tables spoons yogurt and dill together in a bowl. Place the zucchini on a plate with the eggs on top and cover with the yogurt sauce. Enjoy!
