Creamy Cajun Chicken and Peppers

Do you ever have these days were you either don’t feel like grocery shopping or don’t have time so you resort to scrounging around in the house to see what you can whip up for dinner. Sometimes it comes out good and sometimes you are like, “won’t do that again!” Well my car broke down and has been in the shop for a few days. So I had no way to shop for food for the past few days. I had to scrounge hard this time because we had been away for the weekend and were really down to bare bones in the house as far as food. Luckily we shop at BJ’s and buy a lot of things in bulk. So I found some frozen chicken thighs, a can of cream of celery soup, a few small rainbow peppers at the bottom of the veggie drawer. Hmmmmm?  Well , I through it in the crock pot and started spicing it up. Guess what? It came out amazing! I served it over pasta because that is what I had. but next time I make it I want to try it on hoagie rolls. Like a chicken bomb sandwich. Maybe melt a little cheeses on top. Anyways here is my made up recipe:

1 pound boneless chicken thighs

1 can cream of celery soup

5 small rainbow peppers chopped (I only had 5 , but more would be better)

1/3 cup BBQ suace

1 teaspoons cajun seasoning

1 teaspoon granulated garlic

Cook on high for 4 hours. Serve over pasta or on rolls! If I had onions in the house I think it would have been good with onion. So I will add that next time too.
